Hand-picked, 100% Chardonnay from near Hahndorf. The wine is made in the traditional method of Champagne. Aged on lees for up to 70 months before being disgorged using the ancient method of ‘disgorgement à la volée’, which is the release of sediments without freezing the neck of the bottle. The wine is super rich and complex. Roasted pine nuts, toasty citrus and brioche with a very fine bead of bubbles.
